So, this recipe probably isn't much cheaper than a regular stir fry. And you can see there's no rice. But I had to give it a name, and that's the one that popped in my head. My children won't eat this, because it has peppers and onions. But I tested it on some friends, and they liked it so much they went back for seconds. To me, that's validation. I came up with this several months ago when I needed to use up some peppers and tomatoes, and I enjoyed it so much I've made it several times since. Here's what you need: 1 package of smoked sausage of your favorite kind, sliced
1 bell pepper, sliced (I like red or orange, but you can use your favorite) 1 small onion, sliced and quartered 1 package of cherry tomatoes, halved 1 box pasta of your choice (the picture includes multi-colored rotini, but I've done it with others) Italian salad dressing (optional) Parmesan cheese (optional) In a skillet with just a bit of olive oil, cook peppers, onions, and sausage until the onions are starting to soften. Add in tomatoes and cook until the tomatoes are starting to soften, the sausage is starting to brown a bit, and the onions are soft. While that is all cooking, cook the pasta to the package's directions and drain. Toss pasta with some of the Italian salad dressing. To serve, pile on the pasta and top with the sausage mixture. Sprinkle with Parmesan cheese. Ta da! This recipe is so easy and quick. If you're like me and grab bell peppers when they're on the clearance rack at Kroger, it's not too expensive, either.
